Nightly Meal: Noodles with Mushroom Tomato Sauce Garlic Toast and fresh veggies on the side

I took a couple days off over the weekend. Not a break from being vegan, just from posting. We had an incredibly busy weekend with two parties, a bible study, and the last day of missional community training for hubby and I. I am still sleepy from it.

Today, for lunch, I am having a baked sweet potato topped with avocado, black beans, and salsa. Quite delicious.

I did a quick shopping trip to round up our week before payday. On the list, Tacos, Mac N Cheese, BBQ Tofu with rice and broc., and for Thursday we are having friends over for Chili and Trick or Treating!

Super fun!

31 Days to Veganize: Day 23

Last night we had burrito bowls! This is a very easy dish that has many different topping options.

For our bowls I made rice for the base and for the toppings I made black beans, chopped tomatoes, avocado, roasted butternut squash, salsa, baked tofu, and vegan sour cream.

This was so good, I am adding it to my staple dish list.

31 Days to Veganize:Day 22

Nightly Meal: vegan tacos with all the fixings.

I’m getting used to saying no to cheese and dairy ingredients. For instance, today I went out to eat for a friend’s birthday lunch. When it came time to order, I had a soy pumpkin latte and veggie sandwich(hold the cheese).

I’m learning that changing a diet takes practice and encouragement from friends and family.

31 Days to Veganize: Day 20

My friend left today. It’s hard to be the one left behind, as the one leaving is ready to be home to see their family and sleep in their own bed. I always feel such loss when she goes, because even though I have friends here, my best friend has known me longest and is more like my sister.

I made this Mac n cheese for my friend and I think she liked it!

My best best friend is visiting from North Carolina this weekend. She has been great supporting me in my efforts to veganize by trying(with me) new foods and interesting plant based restaurants. Everyone needs a best friend, one that gets you and loves despite. I am blessed by my best friend.

thiry-one-bigNightly Meal: Busy day = Vegan Corn Dogs and Sweet Potato Tots for the kids

For lunch today, I veganized a creamy jalapeño soup! Here’s how I did it.

The recipe I used it from here and I just did an ole switch-a-roo on a couple of ingredients.

Here is the list of ingredients:

  • 4 green jalapeno peppers
  • 1/2 cup carrots, peeled and chopped (roughly 2 carrots)
  • 1/2 cup onion, peeled and chopped (roughly 1 small onion)
  • 2 cloves garlic, peeled and minced
  • 2 tbsp olive oil
  • 3 Tbsp butter, softened (I used Earth Ballance butter)
  • 1/4 cup flour
  • 2 1/2 cups broth (chicken or vegetable) (Switched for Better Than Bouillon, No Chicken Base)
  • 1/2 cup heavy whipping cream or milk (Used coconut milk instead of)
  • Salt and pepper
  • 1/2 cup tomatoes, chopped and peeled (I mixed in a tablespoon of tomato paste)

Simple easy conversion to make this dish vegan friendly.
