So I missed a few days, but that’s ok because here we are at the end of our journey. I wouldn’t call myself a 100% vegan, I sometimes for to say soy latte or forget and eat a piece of milk chocolate. For now though, I have decided to stick with eating vegan. I like it. It makes me feel good and I like making vegan meals…meat is messy.
Nightly Meal: Noodles with Mushroom Tomato Sauce Garlic Toast and fresh veggies on the side
I took a couple days off over the weekend. Not a break from being vegan, just from posting. We had an incredibly busy weekend with two parties, a bible study, and the last day of missional community training for hubby and I. I am still sleepy from it.
Today, for lunch, I am having a baked sweet potato topped with avocado, black beans, and salsa. Quite delicious.
I did a quick shopping trip to round up our week before payday. On the list, Tacos, Mac N Cheese, BBQ Tofu with rice and broc., and for Thursday we are having friends over for Chili and Trick or Treating!
I’m getting used to saying no to cheese and dairy ingredients. For instance, today I went out to eat for a friend’s birthday lunch. When it came time to order, I had a soy pumpkin latte and veggie sandwich(hold the cheese).
I’m learning that changing a diet takes practice and encouragement from friends and family.
My friend left today. It’s hard to be the one left behind, as the one leaving is ready to be home to see their family and sleep in their own bed. I always feel such loss when she goes, because even though I have friends here, my best friend has known me longest and is more like my sister.
I made this Mac n cheese for my friend and I think she liked it!
My best best friend is visiting from North Carolina this weekend. She has been great supporting me in my efforts to veganize by trying(with me) new foods and interesting plant based restaurants. Everyone needs a best friend, one that gets you and loves despite. I am blessed by my best friend.
